Our Story

The Improbable was founded on 28 March 2013 by three friends from different cultures, united by a deep passion for craft beer.

Driven by curiosity and a desire to learn, we sought out other brewers to understand their techniques and refine our know-how. In parallel, we began brewing in our own garage, turning each attempt into a new lesson.

Amidst laughter, long discussions, and endless experimentation, we gradually sought the flavour that truly represented us. After brewing — and tasting — many sometimes surprising creations, we decided in 2019 to fully commit to the brewing world by founding our own brewery in Ependes.

During our years in Ependes, we focused on technical mastery and consistency of quality in every brew. We also began to actively participate in beer festivals across Romandy, sharing our passion with an ever-growing audience.

In 2024, a significant new milestone marked our evolution: we modernised our entire production equipment and moved to Molondin, while renewing our visual identity and logo. This expansion marked our entry into German-speaking Switzerland and paved the way for festivals and collaborations across the country.

At the same time, we expanded our activities by offering contract brewing as well as bespoke brewing services, putting our expertise to work for new collaborations and creative projects.

Today, our ambition remains true to our beginnings: to pursue excellence, continually refine our quality, and explore the endless possibilities that craft beer offers.

We believe that passion, precision, and respect for ingredients are essential to creating sincere and authentic beers. And above all, we wish to share this passion with more and more people — over a drink, in a simple moment, sometimes improbable.
